The United Nations has 193 member countries today. That number has been stable since South Sudan joined on July 14, 2011. A few non-members include Vatican City (observer status) and Palestine (observer status since 2012). Taiwan and Kosovo are also not members. The UN was founded in 1945 with 51 founding states.
